So to cut the fluff, so to speak, for those in the same boat there was only one option that I found worked for me on both Ubuntu 18.04 and 20.04.
This had worked previously with other Macs and older versions of OSX but was not working for the new setup. One of the issues I encountered with multiple solutions offered was how I could remote desktop to a Ubuntu Desktop VM I have for testing purposes from my new system. For myself a little researching on the next and trial and error I am able to get up and running with everything I have tried so far. As I tinker around on the new Macbook Pro M1 running OSX Big Sur, I am finding lots of little things and work arounds needed as companies, teams, and products are working on supporting the new ARM based architecture.
